    Just tried the One Pot Zucchini Mushroom pasta because my neighbor had given me one HUGE zucchini. First, it would be helpful if the recipe would say how many cups of diced zucchini to use, instead of “use two zucchini.” Because in this case, I would not use two of these! Second, the recipe did not say to peel the zucchini. So I didn’t. I sliced and quartered as directed. I cooked the pot as directed, however, the peel of the zucchini did not cook and was hard. Not good. We had to pick through the entire pot and cut off the peel on each piece. Other than that, the dinner tasted good.

    Made the Parmesan Zucchini served them like Fries with Meatloaf and Hamburgers and with Schnitzels, they were great

    Made a nice substitute and healthy too

    I made it with nutritional yeast & it was as good as you’d think! Give it a try! I mixed the nutritional yeast in with the breadcrumbs.

    I just found your site tonight. I have printed off all these wonderful-sounding zucchini recipes, but have not been able to try them yet. What I DO know is that the format of your recipes is SO user friendly. No annoying ads embedded in the recipe that I am forced to print, no unnecessary information that forces a short recipe onto three pages. Thank you for such a pleasant experience!

    I do not like feta cheese, I have tried it and I just don’t like it. What can I substitute or can I just leave it out? Same goes for Greek yogurt, plan regular yogurt be substituted?

      You can substitute goat cheese. And yes, plain yogurt can be substituted.

    I slice them thin and fry them in olive oil or coconut oil with fresh garlic and Italian seasoning. YUM!
