Y’all, I have found a new love… these sourdough, cinnamon apple, Dutch baby pancakes! They’re so easy to make and it’s something the whole family will enjoy. While there are many toppings you can put on these, my recipe today will be for cinnamon apple Dutch Babies to bring in the fall season! It’s such a great way to incorporate something new into your breakfast menu and the perfect twist on the traditional pancake.

So, there are only a few ingredients and tools needed for this delicious breakfast recipe.

Tools needed:

Handmixer or blender

Spatula

Cast iron skillet

Large mixing bowl (if you’re not using a blender)

Ingredients needed for pancake:

Sourdough starter (active sourdough starter or discard)

All purpose flour

Whole milk (or 2% if that’s what you have on hand)

Vanilla extract

Eggs

Butter

Salt

Ingredients needed for topping:

Apples

Butter

Water

Brown sugar

Ground cinnamon

Cornstarch (optional)

How To Make and Bake the Dutch Pancake Batter

Now, for the fun part! Mixing everything to create your sourdough Dutch baby pancake.

So, to start making the sourdough cinnamon apple dutch baby, start by preheating your oven to 375 degrees.

Melt 5 tablespoons of butter, leaving 2 tablespoons divided. Place 2 tablespoons of the melted butter inside of the cast iron skillet and allow to preheat. Make sure you have a hot skillet before placing the batter in. Then, place the remaining 3 tablespoons inside of your large bowl or your blender.

While the cast iron skillet is preheating, now is the time to mix your pancake batter. To start, mix all of your ingredients into your stand mixer bowl, large mixing bowl (using the hand mixer), or a blender. It’s okay if you just fed your sourdough starter and it is an active starter. Make sure the batter is smooth and there are no chunks at all.

Next, once the cast iron skillet has been heated, pour your pancake batter into the hot cast iron skillet. Place your skillet carefully back into the preheated oven, placing it on the middle rack of your oven.

Then, bake the puffy oven pancake for 30-35 minutes or until the top is slightly colored and the edges are golden brown. While the oven is baking the Dutch baby, refrain from opening the oven as this will make the pancake deflate.

How To Make The Cinnamon Apple Topping

While there are a variety of toppings, I love to use apples and apple slices to make an apple Dutch baby pancake. You could even put fresh berries or your favorite toppings on the pancakes.

To make the cinnamon apple topping, you can use any apples of your choice. I like to use Granny Smith apples or Honeycrisp apples. They both are very delicious and crisp apples.Peel and core the apples (forgo this step if you like the peels on your apples). You can slice or dice the apples, I diced them.

Additionally, you can add 1 tbsp of cornstarch if you want your topping to be thicker. If not, then skip this part.

​Now, place your apples, water, brown sugar, butter, and cinnamon into a medium saucepan. Stew the apples on medium to high heat and cook until your desired consistency. Although, some people like their apple topping to be more crisp, while others like theirs a little more mushy.

So, by this time your Dutch puff baby should be finished baking in the cast-iron skillet. Once it’s finished, take your gorgeous baked breakfast out of the hot oven and place your apple topping over the sourdough Dutch baby.

Enjoy and serve warm with optional powdered sugar and maple syrup or honey! Also, it never hurts to add a small amount of butter to your finished Dutch baby. It’s such a delicious recipe.

Additional Toppings You Can Use

So, for this sourdough Dutch baby recipe, I’m using a cinnamon apple topping, there are so many different toppings you can use. However, it’s all on personal preference.

Also, if you want, you could put fresh blueberries and place them on the Dutch baby before placing them in the oven. It’s also such an excellent way to eat your sourdough Dutch baby pancake!

Ingredients

  • For the batter:
  • 5 tablespoons of butter (divided and melted)
  • 6 large eggs
  • 1 cup sourdough starter (active or discard)
  • 1 1/4 cup all purpose flour
  • 1 cup whole milk
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 2 tsp vanilla extract
  • For the apple cinnamon topping:
  • 3 apples
  • 3 tbsp butter
  • 1/3 cup brown sugar (more if desired)
  • 1 tsp ground cinnamon
  • 2 tbsp water
  • 1 tbsp cornstarch (optional)

Instructions

  1. Melt all 5 tbsp of butter and place two tbsp into a cast iron skillet.
  2. Preheat the oven with the cast iron skillet and butter at 375.
  3. Place the remaining 3 tbsp of melted butter into a bowl or blender. While the cast iron skillet is preheating, place all of the ingredients into a bowl or blender and mix until smooth. Make sure there are no chunks.
  4. Once the cast iron skillet and batter are ready, place the batter into the hot oven and skillet. Bake at 375 for 30-35 minutes. Refrain from opening the oven during baking.
  5. While your Dutch baby is baking, it's time to make the apple cinnamon topping.
  6. Peel and core the apples (unless you like the peel then forgo this step). It's also optional to place 1 tablespoon of cornstarch to thicken your topping sauce. Dice or slice your apples however you desire.
  7. Place all of your topping ingredients into a saucepan or frying pan. Apples, cinnamon, brown sugar, water, and butter. Stew the apples on medium to high heat and cook to your desired texture. Let bubble for 1 minute before removing from heat.
  8. Once your Dutch baby has finished baking, place your topping onto the pancake and enjoy.
  9. Powdered sugar, maple syrup, and butter are optional additional toppings.

Notes

Refrain from opening the oven because this will make your puffy pancake deflate
